Big Daddy Jay’s Piña Colada Upside Down Cake

Sometimes you get a hankerin' for something sweet, so I whipped up a pineapple upside down cake with a twist!

Ingredients

1 box pineapple mix 1/3 + 1/4 cup melted butter 1 cup pineapple juice 3 large eggs 7 pineapple slices 13 Royal Anne cherries 1/2 cup brown sugar 1/2 cup coconut, shredded and toasted 1/3 cup sweetened cream of coconut

Preheat oven to 325°. Start by toasting the shredded coconut in a pan over high heat. Heat the skillet on the stovetop on medium and lay the slices of pineapple in the skillet to caramelize the sugars. Remove from heat and add the cherries, toasted coconut, and a mixture of the brown sugar and 1/4 cup melted butter. In a separate bowl combine the pineapple cake mix, pineapple juice, the rest of the melted butter, and the cream of coconut. Mix together with whisk until almost smooth. Add the cake mixture over the cherries toasted coconut and pineapple. Bake at 325° for approximately 40-45 minutes or until toothpick comes out clean.
