Big Daddy Jay's Filipino Beans
I was getting tired of eating the same old beans over and over and so I decided to change it up a bit. I started doing some research on how they make beans in the Philippines and every recipe I told my wife about, she told me there was something wrong about it. After a while, I kind of came up with something that she thought sounded right, and I am going to share that with you today. Enjoy!
Ingredients
1 pound of dried black beans
1 head of garlic
1/2 of a full leek
2 jalapeños
1 bunch cilantro
1 piece of ginger peeled and 3 inches long
1 onion halved
1 tomato halved
1 pound pork bones
Salt
1/2 pound of pork chorizo
1/2 gallon water or more
Sriracha, optional
Soak beans overnight in water with a bit of salt. The next day cook the broth. Start by filling 5 quart dutch oven half with water. In a skillet, roast the onion, jalapeños, ginger, and garlic until browned. Add the pork bones, tomato, cilantro, and leek to the dutch over. Once the jalapeño, garlic, onion, and ginger have been roasted, add to the pot as well. Heat to boil, cover, and simmer for 4-5 hours.
Strain the broth and add 3 cups to a pressure cooker. Cook the chorizo in a small skillet until fully cooked and add to the broth. Add the beans and salt to taste. Build up the pressure in the pressure cooker over medium high heat before lovering to low and cooking for two and a half hours. Serve over rice and enjoy!
