Big Daddy Jay's Asian Dry Aged Steak Dinner
Cucumber Tomato Salad
Ingredients
3 roma tomatoes
1 cucumber
1 tablespoon minced garlic
2 tablespoons red wine vinegar
1 tablespoon fish sauce
Salt to taste
Dice the cucumbers and tomatoes. In a bowl, add garlic, red wine vinegar, fish sauce, and salt to taste. Stir and set aside to marinate.
Garlic Fried Rice
2 tablespoons minced garlic
3 tablespoons soy sauce
4 cups steamed rice
Salt (if necessary)
Grease preheated skillet with lard. Stir fry the garlic until golden brown. Add rice, soy, and salt if you choose (soy will have some salty flavor). Stir fry until evenly mixed.
78 day dry aged steak
Cut steaks and trim off all the dry exterior. Save this for future recipes! Heat griddle skillet to high. Sear steaks on sides first then lay flat. Generously salt the steak, this is really going to bring out amazing flavors. I am shooting for a rare steak here, so I am going to flip the steak at the first sight of blood pooling. Once flipped, I smear Big Daddy Jay’s Steakhouse Herb and Garlic Butter over the top before dropping down on the griddle to get the other side. Once I see the blood pooling in the butter on the steak it’s time to pull from the griddle. Let rest for about ten minutes, then thinly slice the steak. Lot’s of bites, this is a lot of work. Enjoy!
