Big Daddy Jay’s Ham Glaze Recipe
Ingredients
1 cup brown sugar
1/2 cup vegetable oil
1/4 cup brown mustard
1 tablespoon balsamic vinegar, reduced
Splash of pineapple juice
Start by getting the smoker fired up and the internal temperature is 225 degrees. Smoke the ham unwrapped for 3 hours. Spritz the ham with a mixture of 1 part soy sauce, 1 part balsamic vinegar, and 2 parts ham every time you open the smoker and/or every hour. After 3 hours, wrap the ham in foil and continue to smoke. Mix all glaze ingredients in a pan on the stovetop and heat on high to a rolling boil. Set aside to cool. Remove ham from foil once internal temp reaches 160 degrees. Generously apply glaze and continue to smoke until internal temp reaches 165 degrees. Remove hams from smoker and cover with foil. Let ham rest for 1 hour before slicing and serving. Enjoy!
