Big Daddy Jay's Dry Aged Beef and Bone Broth


Ingredients

1/2 pound dry aged beef trimmings

1 pound beef bones

4 quarts water

Salt to taste

In a dutch oven set to low and half full of water, add the dry aged beef trimmings and the beef bones. Salt generously. Top off with water and cover. After an hour, oil and bone marrow and floating on top. Skim the top of the pot periodically to remove as much of the fat as possible. Save the tallow for future recipes. After eight hours of simmering, remove the trimmings and bones. Strain broth through a cheesecloth lined colander. Enjoy!
