Big Daddy Jay's Dry Aged Salisbury Steak
Ingredients
8 ounces chopped bacon
1 roughly chopped onion
2 tablespoons minced garlic
8 ounces sliced mushrooms
1.5 pounds of dry aged ground beef
32 ounces dry aged beef and bone broth
1 cup Italian style bread crumbs
2 eggs
2 tablespoons fresh parsley
2 tablespoons cornstarch
1/4 cup water
Salt to taste
Start by combining the dry aged ground beef, egg, and bread crumbs in a large bowl. Mix ingredients well and form into patties. In a 16” skillet over medium heat add the hamburger steaks and brown on both sides. Add the bacon and continue to brown. Once bacon has browned, add the onion, mushrooms and salt to taste. Once the hamburger steaks are fully cooked, remove from pan and set aside. Continue pan frying the rest of the ingredients until the onions begin to brown and then add the garlic. After three or four minutes, add the dry aged beef and bone broth. Bring to boil on high then reduce to medium heat. Add cornstarch slurry. Continue to simmer, stirring periodically, until gravy begins to thicken. Add parsley. Return hamburger steaks to gravy. Spoon gravy over steaks and cook until gravy is thick and rich. Serve with rice or mashed potatoes. Enjoy!
