Big Daddy Jay's Roasted Green Salsa


Ingredients

10 tomatillos

1 tomato

2 jalapeños

1 tablespoon garlic

Salt to taste

1/2 red onion finely diced

1/3 bunch cilantro finely diced

Juice from 1/2 lime

Roast tomatillos, tomato, and jalapeños. Blend with garlic and salt until smooth. Fry salsa base on medium high in a skillet for about 10-15 minutes. This keeps the solids and liquids from separating. Remove from heat and allow to cool. In a large bowl, combine the base with cilantro, onion and lime juice. Fold together. Enjoy!
