Big Daddy Jay's Burracho Beans


Ingredients

1 pound dry pinto beans

1 12 ounce dark beer

1/3 bunch of cilantro

2 diced roma tomatoes

2 tablespoons Big Daddy Jay’s Adobo Spice Paste

Salt to taste

Soak beans in boiled salt water. Rinse well. Add to Dutch oven with 3 quarts of water and simmer on low for 1 1/2 to 2 hours, or until tender. Strain the beans from the liquid. Add beans back to Dutch oven with the beer, spice paste, tomatoes, and a bit of salt. Simmer until tomatoes begin to soften. Add cilantro at the end of cooking and serve. Enjoy!
