Big Daddy Jay's Arroz con Leche
Hey there folks! I spent a lot of time in my younger days living in the great state of Texas. While there, I met a lot of interesting people, one in particular, a guy from El Salvador named Enrique. He was a cool cat that showed me an interesting spin on arroz con leche from his homeland, and I want to share that recipe with you.
Ingredients
4 cups cooked rice
4 cups whole milk
1 10 ounce can sweetened condensed milk
3-4 cinnamon sticks
1 cup prunes
1 shot tequila
In a dutch over over medium heat, braise the cinnamon sticks and prunes in a shot of tequila. Once, all the tequila is absorbed add rice, milk, and sweetened condensed milk. Simmer for about 20 minutes, then remove from heat, cover, and allow to cool. Add small amounts of milk for a thinner pudding. Serve warm, garnished with cinnamon. Enjoy!
