Big Daddy Jay's Huevos Rancheros
There is nothing like a good hearty breakfast to start the day. One of my favorites in Huevos Rancheros. It's a lightly fried tortilla with refried beans, a fried egg, avocado slices, queso fresco topped with your favorite hot sauce and a pinch of cilantro for garnish.
Ingredients
2 chorizo sausages
1 can of black beans
Juice from 1/2 lime
Salt to taste.
Remove the sausage from the skin and cook in a 6 in skillet until fully cooked. Add the black beans to a large mixing bowl along with the cooked chorizo, the lime, and the salt. Stick blend the ingredients until smooth. Spoon the refried beans back in the skillet and place in the oven on warm.
Next, in a large preheated skillet over medium high heat, we are gonna fry up some tortillas until slightly crispy and browned, but still a touch chewy. Now, lower the heat to low, and add more grease.
Over low heat, pan fry the eggs. Take your time and don’t get in a hurry. Once most of the whites are done, it’s time to flip. I like mine, over easy, so I am only going to fry it for an additional minute.
Build with tortilla first, refried beans, egg, sliced avocado, fine chopped cilantro, quest fresco, and some hot sauce, or build it however you like! Enjoy!
