Big Daddy Jay's Stuffed Tortillas


Hey folks! This is a dish native to El Salvador called a pupusa. This is a popular street food traditionally stuffed with beans, but over the years has had many variations. It really doesn't matter what you stuff it with so be creative and have fun!

Ingredients

5 lb bag prepared masa

10 medium tomatillos

1/2 lb chicharron

salt to taste

1/2 lime juice

1 lb queso quesadilla

Roast tomatillos on preheated plancha set to medium high. Blend in blender with lime juice and salt. Combine mixture with crushed chicharron. Set aside and let chicharron absorb the sauce. Work masa until soft. More often than not you will have to add tablespoons of water at a time. The easier it is to work in a bowl, the easier it will be to form the final pupusa. Add cheese to mixture and stir. Stuff mixture into masa, and work the pupusa flat. Brown on each side for three to four minutes until crisp. Enjoy!
