Big Daddy Jay's Pork Chile Verde


Hi there folks! Today I want to share a recipe that's just perfect for those cold and dreary days that will warm you to your soul.

Ingredients

4 pounds pork sirloin roast

16 medium tomatillos

1/2 yellow onion

2 jalapeños

1/3 bunch cilantro

1 tablespoon minced garlic

Salt and pepper to taste

On a preheated cast iron plancha, roast the tomatillos, onion, and jalapeño. In a blender, blend the roasted tomatillos. Add the jalapeño, onion, cilantro, garlic and salt to blender and blend until completely smooth. Set sauce aside. Salt and pepper the sirloin roast. Sear the pork on all sides on the plancha before adding to the dutch oven. Add sauce to the dutch oven. Heat at medium for two and a half to three hours. Slice roast and ladle sauce over meat. Garnish with cilantro. Enjoy!
