Big Daddy Jay's Carnitas


Hi there folks! Carnitas is sometimes a tough recipe. Too dry, not enough flavor, or just straight up the wrong flavor. Well this is a recipe that is easy and always comes out great.

4 lbs pork, cut into portions no thicker than 2 inches

35 grams salt

35 grams sugar

1 tablespoon garlic

Juice from 2 oranges

Juice from 2 limes

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon oregano

1/2 teaspoon cumin

2 bay leaves

1 can lemon lime soda

Coat the pork pieces in a salt and sugar mixture. Make sure to work the mixture into every crevice of the meat. Refrigerate for one hour.

In an oiled skillet over medium high heat, sear each side of the pork until well browned. In a Dutch Oven, combine meat with the remaining ingredients. Heat in oven set to 300 degrees for 3-4 hours, or until meat is soft and ready to shred.

In the oiled skillet over medium high heat again, panfry the pork at you shred it. Once it’s completely shredded, ladle some of the reserved liquid from Dutch Oven over the meat. Continue to panfry until most liquid has been absorbed. Enjoy!
