Big Daddy Jay's Prime Rib Roast
Hi Folks! Yesterday was Mother's Day and I wanted to whip my Momma and Wife up something special. I had watched many videos on how to do a good prime rib, but there was something that concerned me, that if you make an herbed butter and rub the roast down, wouldn't everything just melt off? I wanted to make a prime rib roast that was just packed with tons of flavor so I set out to do some experimentation.
I took my ribeye roast and trussed it. Then I seasoned it well with a roasted garlic and herb rub. I allowed it the roast to absorb some of the flavor overnight in the refrigerator. The next day, I rubbed it down with some Irish butter and put it in a preheated oven at 450 degrees.
After 30 minutes, I pulled the roast out and lowered the temperature of the oven down to 350. I added some small potatoes and carrots to the pan. then, I inserted a temperature probe, set it to 120 degrees, and returned the roast to the oven.
Once the roast hit 120 degrees, I turned off the oven but let the roast rest in the oven for an additional hour. It, was sliced and served with salad and gravy. It was an amazing dish with tons of flavor.
I think the next time, just to take it a step further, I am going to make a roasted garlic and herb spice paste using an entire roasted head of garlic, fresh thyme, rosemary, and parsley, and grind it all together in the mortar. I'll use that paste to marinate the roast overnight, then follow the rest of the procedure as shown above.
