Big Daddy Jay's Red Beans & Rice


When I was a young kid, I grew up watching Justin Wilson. I would even cook my little meals while pretending to do my own show. He was one of the first that got me into cooking, and I always loved all his stories. I think what I love most of all, Cajun food. I hope you enjoy this recipe!

Ingredients

4 strips of bacon

1/2 small white onion, diced

1 bell pepper, diced

1 celery rib, diced

2 tablespoons minced garlic

8 cups beef broth

1 pound dry red beans

1 pound smoked sausage, sliced

1 tablespoon cajun seasoning

1 tablespoon worcestershire

1 tablespoon hot sauce

2-3 bay leaves

In a preheated and greased skillet, brown the bacon. Then, add the trinity mix and sauté until the onion begins to brown. Next, add garlic and continue to sauté until garlic has begun to brown and has become very fragrant.

In a pressure cooker, combine the broth, with the mix from the skillet, and the remainder of the ingredients. Stir before sealing. Start on high and once the pressure has built, turn down to low. Cook on stovetop for one and a half to two hours. Serve with rice and garnish with green onion. Enjoy!
