Big Daddy Jay's Spicy Filipino Adobo Chicken


This is a very spicy and savory dish of Filipino culture that is just a hands down awesome flavor.

Ingredients

4 leg quarters

1 cup soy

3/4 cup cane vinegar

1 tablespoon black pepper

1 tablespoon fermented chili sauce

1/3 cup brown sugar

1 onion, sliced

2 tablespoons minced garlic

3-4 bay leaves

Begin by prepping the chicken. Separate the leg from the thigh and score the skin so the marinate can penetrate chicken evenly. In a large bowl, combine the soy sauce, vinegar, pepper, and pepper sauce and whisk together. Place chicken in a gallon sized bag with marinade and let rest in refrigerator overnight.

In a preheated skillet, brown the chicken on all sides in small batches. Make sure to reserve the marinade. Once all chicken has been seared and removed from pan, begin to sauté sliced onion. Once the onion has begun to caramelize, add the garlic. The garlic will only take a minute or two to become fragrant, so at this point, add the chicken back to skillet along with the reserved marinade. Braise chicken at medium temperature until sauce has thickened and chicken has become very soft. Serve with rice and enjoy!
