Big Daddy Jay's Collard Greens
Collard greens are one of my favorite soul food side dishes. This is an easy but time consuming recipe, but it's definitely worth the trouble. Enjoy!
Ingredients
4 pounds of shredded collard greens
2 tablespoons butter
1/2 pound bacon pieces
1 smoked turkey wing drumette, meat removed
1/2 yellow onion roughly chopped
2 tablespoons minced garlic
32 ounces chicken broth
2 tablespoons vinegar
1 tablespoon hot sauce
1 teaspoon salt
1 teaspoon pepper
In a preheated dutch over, add the butter and bacon and let pan fry until bacon begins to brown. Add the turkey meat and pan fry for another 5 minutes. Add the onion and sauté for about 3 minutes before adding garlic. Once the garlic begins to brown and has become very fragrant, add broth, vinegar, hot sauce, salt and pepper. Bring to simmer and add shredded collard greens. Cover and simmer on medium low for about 2 hours. Enjoy!
