Big Daddy Jay's Filipino BBQ Pork Belly


I love filipino food, but I also live in an area where finding filipino food is hard. So I set out on a quest to learn to make it. This is an easy recipe that is definitely worth it and is sure to please! Enjoy!

Ingredients

Marinade

1/2 cup banana sauce

1/2 cup soy sauce

2 tablespoons lime juice

2 tablespoons sour orange juice

6 oz lemon lime soda

1 tablespoon garlic

Glaze

1 cup of reserved marinade

6 oz lemon lime soda

1/2 cup brown sugar

Begin by combining all the marinade ingredients together. Slice pork belly in 3/4 inch strips and put in a gallon freezer bag. Reserve one cup of marinade for the glaze and add the rest to the pork belly. Marinate this in the refrigerator for 24 to 48 hours.

In a small skillet, combine the reserved marinade, the soda, and the brown sugar and bring to a high simmer until the glaze begins to thicken and can coat the back of a spoon.

Skewer pork belly and grill over medium flame. Turn 3-4 while grilling and make sure to glaze each time the meat is turned. Remove from grill when pork is cooked well done, the skin has started to crisp, and the glaze has begun to caramelize. Enjoy!
