Big Daddy Jay's Israeli Hummus

A good friend of mine made the trip to the Holy Land, Jerusalem, and brought back spices. He came over and gave me what is called zaatar. Now zaatar is a very common name for this mixture and there are many variations. Some can be green like what I used but there are others that are brown. From what I can see and smell, I believe this batch is primarily made from a blend of hyssop, sumac, and sesame. This is an experimental recipe because I have never come across this stuff before, but if you ever decide to give it a shot, I hope you enjoy it.

Ingredients

2 cups dry hummus powder

2 cups water

Juice from one lemon

2 tablespoons olive oil

Zest from one lemon

1 teaspoon minced garlic

1 teaspoon zaatar

1/4 cup olive oil

Green olives

Paprika

So I started with the olive oil mixture so the flavors would have some time to meld together. In a small bowl, add 1/4 cup of olive oil, garlic, lemon zest, and zaatar seasoning. Mix well and set aside.

In a large mixing bowl, combine the dried ground hummus powder, water, lemon juice, and the remaining 2 tablespoons of olive oil. Mix well. Transfer hummus to serving dish. Top with the olive oil mixture, garnish with a couple of green olives, and sprinkle paprika around the outside edge. Serve with pita crisps and Enjoy!
