Big Daddy Jay's Maque Choux
This is a relatively easy and flavorful cajun side dish that exquisitely accompanies most southern cooking dishes. It never disappoints. Enjoy!
Ingredients
4 tablespoons of butter
3 strips of bacon
5 ears of corn, corn removed
1 1/2 cup trinity mix
1 Tbsp thyme
3 tablespoons minced garlic
2 Roma tomatos diced
2 green onion stalks, sliced
1/2 teaspoon red chile powder
Salt and pepper to taste
Start the dish by melting down the butter in the dutch oven or skillet. Then add the bacon and brown it for about ten minutes. Add the trinity mix and sauté until the onions have begun to brown. Add the garlic and cook for a few more minutes longer. Next, add the tomatoes and continue cooking until they have softened, about five minutes. Finally, add the corn, chili powder, thyme, salt and pepper. Thoroughly mix and cook on low, covered, for about 20 minutes. Enjoy!
