Big Daddy Jay's Frenchie Chicken Parmesan

I had a good friend pop in the other night wanting to do a revised version of his amazing Frenchie sandwich. It is so filling it's hard to eat but it is delicious either way. Make one for yourself and try to tell me otherwise!

Ingredients

2 chicken breasts filleted and pounded flat

1 cup flour

4 eggs

1/2 cup buttermilk

1 cup Italian bread crumbs

1 teaspoon garlic

1 teaspoon smoked paprika

1 cup grated parmesan cheese

Tomato pasta sauce

Sliced Havarti cheese

Sliced French loaf

Small bag of plain potato chips crushed

2 tablespoons oil

1 tablespoon butter

Start by filleting chicken in half and pound flat. Add to a large bowl with 1 cup of flower and make sure the chicken is evenly coated. Wish together 2 eggs with the buttermilk. In a separate large bowl, combine the bread crumbs, paprika, garlic, and parmesan cheese and mix together. Dredge the chicken in the egg wash before breading in the bread crumb mixture. Make sure to really press the chicken into the crumbs to get them to stick well. Fry in a skillet over medium heat in two tablespoons of oil until browned, about 3 minutes per side. Remove from heat and set aside. Once all the chicken has been cooked, add the fried chicken to a skillet, spoon pasta sauce over the chicken, and add a slice of Havarti cheese. Broil on low until cheese has bubbled and begun to brown. In a large bowl, whisk up 2 eggs. In a separate large bowl, crush plain potato chips. Take a slice of French loaf, dip one side in the egg wash, and then coat with potato chips. In a skillet over medium heat, melt a tablespoon of butter and pan fry bread until golden brown. Assemble sandwich and Enjoy!
