Big Daddy Jay's Okra and Tomatoes

I spent this summer meal prepping vegetables that were in season into cajun side dishes. Now that okra is finally in season I can make an awesome vegetable side dish that goes great with most southern cooking. Check out the recipe, watch the video, and enjoy!

Cajun Okra and Tomatos

Ingredients

1/2 pound diced bacon

1 diced yellow onion

1 tablespoon diced garlic

2 pounds sliced okra

1 16 oz can crushed tomatoes

4 diced medium tomatoes

Salt and pepper to taste

1 teaspoon cajun seasoning

1/4 cup fine diced fresh parsley

1-2 tablespoons hot sauce

Start by browning the bacon over medium heat. Once it has begun to brown add the onions. We are gonna sauté the onions until the have begin to caramelize, or for about four to five minutes. Then we add the garlic and sauté for a couple more minutes longer. Then add the rest of the ingredients to the pot, reduce heat to low, and simmer for an hour and a half to two hours. Enjoy!
